    In the early 1920s, the Wagner Manufacturing Company invented the “flat bottom” cast iron skillet with a round diameter bacon press to alleviate “bacon buckling”.
    When frying bacon in an already heated cast iron skillet, thick cut swine strips would curl or bubble up around the areas with the pork fat that caused the bacon to buckle and curl up…nicknamed “bacon buckling”.
    The uneven contact between the bacon and the hot flat surface when buckled, prevents the meat from cooking evenly, crispy, or especially quickly.
    All throughout the 19th century, hundreds of forged metal cookware manufacturers from all around the world would design and create a version of the bacon press like Wagner.
    Whether for flattening or decoration, bacon presses have been used in restaurants and kitchens everywhere. Skillet frying bacon became less popular when pork bacon began being processed in thinner cuts and with fat content per slice. Tin foil layered baking pans in ovens, microwaves, and air fryers, have all taken away the mandatory need for a bacon press. Southern “down home” restaurant cooks still use them and household kitchens that love thick cut bacon can still find the bacon press invaluable. Cast iron is easy to clean when used, and with the wooden handle and embossed “farm pig”, this particular bacon press could add some rustic country charm to any stovetop.
