A “timbale iron” is a late 19th century Scandinavian/Swedish kitchen tool invention that was used to make thin and crispy shells to serve as dessert serving cups. The cups were also stuffed with meats and vegetables for hors d’oeuvres. The irons were manufactured by several forgers in Europe and America out of cast iron until the mid-1950s when timbale kits were manufactured in aluminum and mainly just associated with baking molds. The timbales were normally in shapes such as the standard fluted round, stars, hearts, or flowers to make the infamous “rosette” pattern pastry. In Scandinavia (and Sweden) these irons were historically a major staple in every household and widely used for holidays and celebrations. How it worked is first a pan of hot oil would be heated to frying temperature. A thin batter of choice would serve as the shell. The mold would be dipped into the batter and then set in the hot oil pan. The batter would turn a golden brown and release itself from the timbales. The finished shell serves as a cup in the shape of the timbales on the outside of the mold…flower, star, heart, etc. This item is the HEART shaped timbale mold and the handle. Unmarked tool but is believed to be American made. This iron can be “seasoned” and still be used for several Scandinavian and Swedish dishes or as a kitchen decoration.
